Traditional 12 inch diameter sushi rice mixing bowl made of Japanese Cypress (hinoki). Designed to keep rice at the right levels of moisture and warmth. The soft, porous Cypress wood absorbs excess moisture from the rice and keeps it from drying out. This Hangiri wooden sushi rice bowl's large, unfinished surface helps moisture to evaporate quickly so the rice ends up light and loose rather than sticky and gelatinized. And the thick walls and base of the sushi-oke keep the rice warm. The Japanese-made sushi-oke is a finer, higher quality tub compared with the lower cost Chinese-made sushi-oke. In the past, these rice tubs had copper bands to hold the wood together. This modern version uses elastic plastic bands that keep pressure on the wood at all times during swelling and contraction.
