Sushi, Sashimi, Vegetable & Meat Japanese Knives

We offer sharp and durable sushi knives in 12, 10.5, and 9-inch lengths. The classic sushi knife for slicing sashimi is called Yanagiba. Additional Japanese knives are the Deba (for meats), Nakiri (for vegetables) and Gyutou (all purpose chef's knife).

Besides a selection of Yanagiba knives, we have two complete collections of Japanese knives, available individually or as a set - the Shibui (classic) and the Umai (splendid). The Shibui knives have a natural wood handles and brushed stainless steel blades. The Umai is the same knife with a stained wood handles and dimpled, polished stainless steel blades. The dimpling is not only decorative, but adds air space between the blade and the food which helps the food release and not stick to the blade.
